Veggie Burger – Gluten Free

*2 cups quinoa (dry)
*10 oz Sliced White Mushrooms
*1 tablespoon chopped cilantro
*Jalepenos to taste
*Chile powder to taste
*Black pepper to taste
*Salt to taste
*Vegetable broth
*Safflower oil

Wash mushrooms and place into blender with jalepenos, 1 cup quinoa, and 1 tablespoon chopped cilantro. Use only as much vegetable broth as necessary to mix ingredients. Transfer to mixing bowl, add second cup of quinoa and mix by hand. Let mixture sit 20 minutes for quinoa to soften. Add chile powder, black pepper and salt as desired. Divide mixture into 8 equal sections.

Coat a non-stick skillet, griddle or grill with safflower oil. Place sections of mixture carefully onto cooking surface and mold into burger-shaped patties with a flat spatula. Cook through until brown on both sides.

Serve over greens for a healthy vegan entree or on gluten free bread or bun for a more traditional burger.
