Homemade Hummus Recipe

Homemade Hummus RecipeIngredients:
2 cups organic chickpeas
1/2 cup organic lemon juice
1/4 cup tahini
1 tbsp. olive oil
1 tsp minced garlic
water to reach desired thickness

 

Place chickpeas in food processor first and add additional ingredients. Blend and add water as needed until you reach your desired thickness. For an extra fine hummus, you can put it through a sieve before serving. Top with additional olive oil if desired and serve with your choice of vegetables.

Mango and Strawberry Smoothie

Mango and Strawberry SmoothieIngredients
Strawberry Smoothie Blend:
2 cups organic strawberries
2 oz. chevre
1/4 cup goat milk
Mango Smoothie Blend:
2 organic mangos
1/4 cup goat milk
1/4 cup lemon juice

Wash the strawberries and mangos and slice into workable pieces. Place the mango slices into the food processor with 1/4 cup goat milk and 1/4 cup lemon juice. Process until smooth and set aside. Clean the processor before making the strawberry blend. Place the strawberries, chevre and goat milk into the processor and blend until smooth.

Once both of your smoothie blends have been made, you can begin to assemble the smoothie. Pour half of the mango mix into the bottom of your glass. Carefully spoon the strawberry blend on top of the mango layer, being careful to not let it fall below the surface. Spoon the other half of the mango on top of the strawberry layer in the same way to preserve the layered look.

This recipe makes 1-2 smoothies and can easily be doubled or tripled if you need more. If the layered look requires too much effort, feel free to blend them together. Enjoy!

Apricots With Clove Sauce

Apricots With Clove SauceIngredients:
2 organic apricots
2 oz. chevre
3 tbsp. goat milk
1 tbsp. palm sugar
1 pinch ground cloves

 

Wash and slice the apricots in half. Remove the pits and set aside. Place 2 oz of chevre into a small bowl with the goat milk, palm sugar and ground cloves. Mix until the chevre, palm sugar and cloves have all been incorporated smoothly. Spoon the sauce equally over the apricot slices and serve. That’s it, simple and delicious!

Strawberry Goat Milk Ice Cream

Strawberry Goat Milk Ice CreamIngredients:
Frozen Organic Strawberries
Goat Milk

 

 

 

Place 1 cup of goat milk in the food processor with 1/2 cup of frozen strawberries. Blend until the consistency of ice cream and place in freezer until ready to serve.  To make the strawberry sauce, heat 1/2 cup of strawberries in a sauce pan until they begin to break down.  Scoop the ice cream into a serving dish and top with the sauce.  Delicious and healthy too!

Cilantro Goat Cheese Dip

Cilantro and Goat Cheese DipIngredients:
3/4 cup organic goat cheese
finely chopped organic cilantro
finely chopped organic chives
2 tbsp. lime juice
1 dash hot sauce

 

Today we had the pleasure of enjoying our first harvest from our home garden. We had a few peppers, cilantro, and chives to enjoy. I decided to keep things simple and create a goat cheese dip with the herbs to use with raw sliced peppers. It is really quite simple, just wash and chop the herbs, and mix into the softened goat cheese with lime juice and a dash of your favorite hot sauce. For a thinner dip (ours pictured is more of a cheese ball consistency), you could mix in a few tablespoons of goat milk. This was dinner!

Red, White and Blue Berries

Organic Blueberries
Organic Strawberries
Organic Cream
Vanilla Extract to taste
Opt: palm sugar to taste

 

I don’t have quantities here since it really doesn’t matter. You can make as much or as little as you desire, whether you make this for just yourself or for an entire party. Put the cream into a food processor with the vanilla extract and palm sugar if desired (I preferred mine without sugar) and spin until whipped. Wash the berries and layer into the serving dish placing the whipped cream between each level of fruit. That’s it! Very simple, and very delicious. Perfect for a 4th of July dessert!

Caprese Style Tomato and Goat Cheese Salad

Organic Tomatoes
Organic Chevre
Organic Basil

 

 

Slice the tomatoes evenly and arrange on a platter. Mold the chevre into flat circular pieces and place on top of each tomato slice. If your chevre is too crumbly to cooperate, warming it slightly may make it more workable. Arrange basil leaves on the sides and/or between each tomato.

Spiked Strawberry Sorbet

4 cups organic frozen strawberries
1/4 cup fresh organic lime juice
2 shots tequila

 

 

 

As the weather gets warmer, we find ourselves gravitating more and more to lighter meals, fruits and frozen treats. This frozen beauty is made of frozen strawberries and fresh lime juice. The addition of tequila is entirely optional. Place the frozen strawberries into your blender along with the tequila and lime juice. Blend until the berries are completely smooth. You can add additional water if more liquid is needed to blend properly, but the ultimate goal is for a sorbet texture once complete. This can be placed back into the freezer to firm up if necessary.  I served ours in ball jars, but this could easily be scooped into a dish as well.

Tomato Hummus and Guacamole Stack

Tomato Hummus Guacamole StackIngredients:
4 tbsp hummus
2 tbsp guacamole
1 large organic tomato
Fresh organic greens

 

 

Slice the tomato and cut in half. Place two of the slices on a bed of greens and cover each layer with hummus or guacamole, alternating on each level. That’s it! I will post recipes for homemade hummus and guacamole in the upcoming weeks. 🙂
